Coffee coconut fudgsicles – creamy, cold and totally indulgent, these frozen treats will cool you off and give you a boost on a hot afternoon!
In light of what’s going on in Texas and Louisiana, I feel my light chit-chat about fudgsicles may seem totally inappropriate, and so out of respect I’ll keep it short.
I hope this nightmare is over soon, with minimum casualties. I’ve been through Katrina and Wilma myself in 2005, and know to a certain extent how totally devastating this is, especially for people with young children, or the elderly. I certainly wasn’t in the thick of it then, and I cannot begin to imagine what it is, to have to leave your home with all your lifetime worth of memories in it, not knowing if you’d lose it, and not knowing whether you’d get out of it alive…My heart goes out to those people who’d suffered a loss, and those whose life might have just turned upside down with no clear picture ahead. For those willing to extend a helping hand, here’s a list of organizations that accept donations.
Here, in the Bay Area, we’re in the midst of a heat wave, with temperatures expected to rise up to 114°F in places today. My sweet answer for the scorching heat are these cold, creamy and delicious coffee coconut fudgsicles. They will cool you off, and wake up your stewing, sleepy brain at 3 pm, like a charm.
So what goes in them? My favorite two ingredients – coffee and coconut, mixed into a magic concoction, with some creamy mascarpone cheese for indulgence. I also made a batch of this awesome coconut caramel sauce to drizzle on top, and dipped the fudgsicles in toasted coconut flakes. If you make the caramel in advance, be sure to take it out of the fridge so the fat melts, and doesn’t clump up like mine did on the pictures (ugh!!) No time to re-take the photo (they were melting too fast!)
And those cute wooden sticks, you may have noticed, were wood burned by my daughter, and generously donated for the cause. ?

Here’re a few other ideas to keep you cool. Try cold soups instead of cooking a meal – they are light, and fast and easy to make, but most importantly they are cold, and feel so good going down, on a hot day:
Cold yogurt and cucumber soup
Salmorejo (cold tomato and bread soup)
Chilled corn soup with garlic shrimp and avocado

- 1 227g container mascrapone cheese
- 1/2 cup sweetened condensed milk*
- 1/2 cup light coconut milk
- 1/2 cup unsweetened coconut flakes
- 1 tsp vanilla extract
- 1 tsp instant coffee

Add all ingredients, except the coffee in a bowl, and using a hand mixer beat until smooth.

Separate about 1 cup of the mixture, and add the instant coffee to it. Stir, until blended well.

Fill in popsicle molds about 2/3 each with the coconut mix, then top with the coffee mix. Place in freezer for about 40 min. Take out and insert a wooden stick, then return to freezer until the popsicles have hardened.

Before serving, dip each mold into hot water briefly to help loosen the popsicle. Optionally, dip the popsicles in toasted coconut flakes, and drizzle with coconut caramel.
