Eggs in garlicky yogurt – crispy fried egg whites and soft yolks, drizzled with butter paprika sauce, and served over a bed of cold, creamy garlicky yogurt – this is the ultimate egg dish to dig in with a piece of toasted bread!
Let me just start by saying that these eggs in garlicky yogurt, drizzled with butter paprika sauce, and grated feta cheese, are my favorite way to eat eggs. At first glance it may sound a bit weird (fried eggs in yogurt?) but you have to trust me when I tell you – this simple meal is bursting with flavors that go together magically, and it might very well become your favorite egg dish too.
It’s a quick and easy meal that my mom would often prepare on busy days for lunch or dinner, and something I always loved eating as a kid. My children love it too – they always want seconds.
Although it’s a Bulgarian staple, this recipe is quite similar to the Turkish Çilbir, and naturally so, as our cuisines have so much in common.
I love it especially in the summer because of the cold yogurt sauce – creamy and garlicky, it provides a nice contrast to the warm fried eggs. A side note here – you can make the recipe with poached eggs, as it’s traditionally made, or prepare your eggs the way you like them best: slightly runny, fully cooked, or crispy fried- it will all work. I like mine with crispy edges and half cooked yolks.

I personally love a good amount of feta cheese on top of my eggs, but even without it, the eggs will taste amazing! It’s the ultimate egg dish for breakfast, brunch and dinner! And it’s the perfect one to dig in with a piece of toasted bread.

- 1 1/2 cups plain yogurt
- 2 garlic cloves, smashed
- 2 Tbs butter
- 1 tsp sweet Hungarian paprika
- 4 eggs
- 2 Tbs olive oil
- salt

Mix the yogurt, the garlic, and salt, and leave in the fridge.

Fry the eggs in the oil (or poach them), until the whites are crispy on the edges and opaque, and the yolks are still slightly soft.

In the same pan you fried the eggs, melt the butter, and quickly stir the red paprika for a few seconds, being careful not to burn it. Remove from heat.

To assemble the dish, divide the yogurt between two plates, place two eggs on top of each plate, and drizzle with the paprika sauce.

Optionally grate some good quality feta cheese on top, and serve with toasted rustic bread.

Delicious! Didn’t have feta on hand, and enjoyed with hashbrowns instead of bread. And… delicious.
I wasn’t sure about the idea of eggs and yogurt together, but the paprika butter sauce ties the whole thing together wonderfully.
I would say only half the yogurt was consumed, so I might go with only 1 cup yogurt next time. But don’t worry, I’ll use the leftovers tomorrow. 🙂
