Coming back to real life from a month-long vacation is not easy…
Although I can’t wait to share some of the most delicious recipes I’ve tried, and the amazing places I visited on my trip to the old country, I’m still in a lazy, post-vacation state of mind, trying to shake off the remaining jet lag, and slowly easing back to my daily routine. So until I am back to my normal disciplined self, I will go easy with some tried and true recipe like this garlic tuna tomato salad.
It’s a favorite summer dinner in our house. Sometimes I make it a few times a week, and it’s all we need on a hot night – juicy, fresh, delicious and light, it’s big on flavor from all the garlic-pesto-mustard dressing, and it leaves you completely satisfied due to the lean protein and fiber.
As always, for this salad to shine, you need to use the best heirloom tomatoes you can get from the farmer’s market. The ones that are super juicy, and sweet, have thin skin, and almost melt in your mouth.
I use a store-bought pesto to save time, and it all comes together in 15 minutes or so.

- 2 lbs heirloom tomatoes
- 1 can of solid tuna
- 3-4 garlic cloves, pressed
- 3 Tbs olive oil
- 1 tsp basil pesto
- 2 tsp brown mustard
- 1 Tbs capers
- salt and pepper
- fresh basil leaves

Mix the tuna with the mustard and capers, add salt and pepper.

Make a dressing by mixing the pesto, olive oil and pressed garlic cloves.

Slice tomatoes and arrange on a plate. Spread the tuna on top, and drizzle with the dressing.

Top with fresh basil and adjust the salt and pepper if needed.
